its origin comes from the streets of Lima, approximately from the 70’s, as an option for fast food sold at night, aimed at those who did not have more time than just a quarter of an hour before continuing their day. That’s how Peruvian creativity invented something that was quick to make and appeased hunger fast.
Chef’s suggestion: This dish is an indulgement for us Peruvians, when we go to the street food scene, we know is a favorite of many. To enhance the experience and make it more power, as we say back home, you may add as many sauces as you want “con todas las cremas”, a fried egg on top and even cheese. To drink an Inca Kola or Chicha is good!
