The origin of Pan con Chicharrón dates back to the first encounters between Spaniards and Peruvian natives, during the conquest of the Inca empire. This sandwich was first served in a different format, it was pieces of fried Iberian pork with potatoes, sweet potatoes and native corn. As time passed by it developed into what is now: pork belly, fried sweet potatoes and sarza criolla, and because Peruvians turn everything into a sandwich, we put all these ingredients in one.

Chef’s suggestion: for this crunchy and flavorful sandwich we recommend to get extra sarza criolla and sweet potato fries. If you are eating for breakfast a cafesito would be great, for lunch a chicha morada is just perfect!
